Bacon & Birdseed Muffins
1/3 cup granulated white sugar
1/2 cup vegetable oil
2 eggs, beaten
1 cup plain yogurt
1 cup 2 % milk
5 strips crispy bacon, crumbled
1 1/2 cup unbleached flour
1 1/2 cup cornmeal
1/2 cup food grade millet
2 tablespoons baking powder
2 teaspoons salt
Mix sugar and vegetable. Add eggs, beat.
Stir in yogurt, milk and bacon.
In separate bowl mix flour, cornmeal, millet,
baking powder and salt.
Add 1/3 dry mixture to liquid, mix, add 1/3 dry mixture,
stir and add final 1/3 of dry ingredients and mix just
Spray muffin tins with vegetable spray, ice cream scoop
batter into tins. Bake at 400 degrees F 14-18 minutes
until golden brown.
