These no-bake energy bites (aka Donna’s Dynamite Bars) are a hit at our resort! No matter the occasion, everyone seems to enjoy eating them.
1 cup coconut oil
3 cups peanut butter
2 cups honey
2 cups chocolate chips
2 cups cocoa powder
Melt above 5 ingredients in 5 quart pan.
3 Tablespoons vanilla added after other ingredients melted
In large mixing bowl add:
8 cups regular oatmeal
2 cups almonds, sliced
2 cups coconut flakes
3 cups sunflower seeds
4 cups ground flax meal
3 Tablespoons chia seeds soaked in 1/4 cup water
Mix dry ingredients and create a well in the middle. Add liquified ingredients. Stir until well mixed.
Place and compress in 2-11 x 15 pans. Refrigerate several hours. Cut into squares and enjoy!
